2 Roma Tomatoes (Diced)
1 cup white grain rice
2 cups gluten-free chicken broth or stock of chicken
1/4 cup of gluten-free, tomato-free, and non-gmo taco seasoning
Half yellow onions (medium size cut finely)
Two cloves of garlic (can be substituted by 1/2 teaspoon of garlic powder)
1/2 cup chopped carrots
1 cup corn kernels
1 cup of frozen peas
1/4 tsp. Chili Powder
2 tbsp. Chopped Fresh Cilantro leaves
Kosher salt, and freshly crushed black pepper, according to your taste

INSTRUCTIONS
Puree the garlic, onion, tomatoes, and water using blenders or in a food processor for at least 1 minute or until the mixture is smooth. Set aside.
Warm oil to medium temperature in a large saucepan. Include long grain rice, and stir it for 5 minutes or until the rice texture is golden brown.
Incorporate chicken broth and tomatoes-free taco seasoning, and blend into Rice. Stir, then bring it to a boil for around two minutes. Include the peas, corn chilli powder and cumin, and carrots. Add salt and pepper as desired.
Reduce the heat and then cover the pan. Let it simmer for at least 20 minutes before muffling the Rice with a fork.
